Ingredients

  • 1 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 large sweet potatoes
  • 1/4 cup milk
  • 2 tbsp butter
  • 1/2 cup bourbon
  • 1/4 cup maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp soy sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine ground pork, breadcrumbs, Parmesan cheese, egg, garlic, salt, and pepper. Mix well and form into meatballs.
  3. Place meatballs on a baking sheet and bake for 20-25 minutes until cooked through.
  4. While the meatballs are baking, peel and chop sweet potatoes. Boil in salted water until tender, about 15-20 minutes.
  5. Drain sweet potatoes and mash with milk and butter until smooth. Season with salt to taste.
  6. In a saucepan, combine bourbon, maple syrup, Dijon mustard, and soy sauce. Simmer for 5-7 minutes until slightly thickened.
  7. Serve meatballs over sweet potato mash, drizzled with bourbon-maple sauce.

  • For a spicier kick, add red pepper flakes to the meatball mixture.
