- 1 lb ground pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 2 large sweet potatoes
- 1/4 cup milk
- 2 tbsp butter
- 1/2 cup bourbon
- 1/4 cup maple syrup
- 1 tbsp Dijon mustard
- 1 tbsp soy sauce
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine ground pork, breadcrumbs, Parmesan cheese, egg, garlic, salt, and pepper. Mix well and form into meatballs.
- Place meatballs on a baking sheet and bake for 20-25 minutes until cooked through.
- While the meatballs are baking, peel and chop sweet potatoes. Boil in salted water until tender, about 15-20 minutes.
- Drain sweet potatoes and mash with milk and butter until smooth. Season with salt to taste.
- In a saucepan, combine bourbon, maple syrup, Dijon mustard, and soy sauce. Simmer for 5-7 minutes until slightly thickened.
- Serve meatballs over sweet potato mash, drizzled with bourbon-maple sauce.
Notes
- For a spicier kick, add red pepper flakes to the meatball mixture.
- Ensure the bourbon is cooked off properly for a milder flavor.
- This dish can be made ahead and reheated for convenience.
