Ingredients

  • 8 slices of bread (sourdough or white)
  • 2 cups mozzarella cheese, shredded
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup pepperoni slices
  • 1 cup bell peppers, sliced (red, yellow, or green)
  • 1/2 cup onions, sliced
  • 1/2 cup pizza sauce
  • 1/4 cup butter, softened

Instructions

  1. Heat a skillet over medium heat.
  2. Generously butter one side of each slice of bread.
  3. Place one slice of bread, butter side down, in the skillet.
  4. Layer mozzarella, pepperoni, bell peppers, onions, and pizza sauce on the bread.
  5. Top with another slice of bread, butter side up.
  6. Cook until golden brown on the bottom, about 3–4 minutes.
  7. Carefully flip the sandwich and cook until the other side is golden and the cheese has melted, about another 3–4 minutes.
  8. Remove from skillet, slice in half, and serve hot.
