Instructions
- Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
- In a bowl, sift together almond flour and powdered sugar.
- In a separate bowl, beat egg whites until foamy, then gradually add granulated sugar and continue beating until stiff peaks form.
- Gently fold the almond flour mixture into the egg whites, adding peppermint extract and food coloring if desired.
- Pipe small circles onto the prepared baking sheets and let them sit for 30 minutes to form a skin.
- Bake for 15-20 minutes, then let cool completely.
- For the filling, beat softened butter with powdered sugar and peppermint extract until smooth.
- Sandwich two macaron shells together with the peppermint filling.
