- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 cup chopped pecans
- 2 cups peeled and diced apples
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, mix together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
- Add the softened butter, eggs, and buttermilk to the dry ingredients and mix until well combined.
- Fold in the diced apples and half of the chopped pecans.
- Pour the batter into the prepared baking dish and spread evenly.
- In a separate bowl, combine the remaining pecans with a little brown sugar and sprinkle over the top of the batter.
- Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
- Let cool before serving.
Notes
- For a richer flavor, use a mix of sweet and tart apples.
- This cake can be served warm or at room temperature.
- Store leftovers in an airtight container at room temperature for up to 3 days.
