Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup chopped pecans
  • 2 cups peeled and diced apples
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, mix together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
  3. Add the softened butter, eggs, and buttermilk to the dry ingredients and mix until well combined.
  4. Fold in the diced apples and half of the chopped pecans.
  5. Pour the batter into the prepared baking dish and spread evenly.
  6. In a separate bowl, combine the remaining pecans with a little brown sugar and sprinkle over the top of the batter.
  7. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool before serving.
