Description

PB&J Blondies with Raspberry Swirl are a delicious twist on the classic peanut butter and jelly sandwich, combining rich blondie texture with a fruity raspberry swirl.


Ingredients

  • 1 cup creamy peanut butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup raspberry jam

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a large bowl, mix together the peanut butter, brown sugar, and granulated sugar until smooth.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Pour half of the blondie batter into the prepared pan and spread evenly.
  7. Drop spoonfuls of raspberry jam over the batter and swirl with a knife.
  8. Pour the remaining blondie batter on top and swirl again with the jam.
  9. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow to cool before cutting into squares and serving.

Notes

  • For a more intense raspberry flavor, use fresh raspberries in addition to the jam.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
