Description
PB&J Blondies with Raspberry Swirl are a delicious twist on the classic peanut butter and jelly sandwich, combining rich blondie texture with a fruity raspberry swirl.

- 1 cup creamy peanut butter
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup raspberry jam
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a large bowl, mix together the peanut butter, brown sugar, and granulated sugar until smooth.
- Add the eggs and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Pour half of the blondie batter into the prepared pan and spread evenly.
- Drop spoonfuls of raspberry jam over the batter and swirl with a knife.
- Pour the remaining blondie batter on top and swirl again with the jam.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before cutting into squares and serving.
Notes
- For a more intense raspberry flavor, use fresh raspberries in addition to the jam.
- Store leftovers in an airtight container at room temperature for up to 3 days.
- These blondies can be frozen for up to 2 months.
