Ingredients

  • 2 chicken breasts
  • 1 cup tortellini
  • 1 cup asparagus, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pesto
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Season chicken breasts with salt and pepper, add to the pan, and cook for about 5-7 minutes per side until browned and cooked through.
  3. Remove chicken and set aside to rest.
  4. Add asparagus and cherry tomatoes to the same pan, sauté for approximately 3-4 minutes.
  5. Toss in the tortellini and cook according to package instructions, stirring gently.
  6. Stir in the pesto until well combined.
  7. Reintroduce the chicken to the pan, toss everything together, and serve warm.
