- 2 chicken breasts
- 1 cup tortellini
- 1 cup asparagus, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup pesto
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Season chicken breasts with salt and pepper, add to the pan, and cook for about 5-7 minutes per side until browned and cooked through.
- Remove chicken and set aside to rest.
- Add asparagus and cherry tomatoes to the same pan, sauté for approximately 3-4 minutes.
- Toss in the tortellini and cook according to package instructions, stirring gently.
- Stir in the pesto until well combined.
- Reintroduce the chicken to the pan, toss everything together, and serve warm.
