- 2 cups fresh blueberries
- 1/4 cup chia seeds
- 1/4 cup honey or maple syrup
- 1 cup almond milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon juice
- 1 pre-made graham cracker crust
Instructions
- In a blender, combine blueberries, honey or maple syrup, almond milk, vanilla extract, and lemon juice. Blend until smooth.
- Add chia seeds to the mixture and stir well.
- Let the mixture sit for about 10 minutes to allow the chia seeds to thicken.
- Pour the blueberry mixture into the pre-made graham cracker crust.
- Refrigerate for at least 2 hours or until set.
- Slice and serve chilled, garnished with fresh blueberries if desired.
Notes
- For a vegan option, use maple syrup instead of honey.
- Feel free to substitute other berries if desired.
