- 1 cup chopped nuts
- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 3 cups all-purpose flour

- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1/2 cup orange juice
- 1/4 cup brandy or rum
Instructions
- Prep the dried fruits and nuts by measuring and chopping into bite-sized pieces.
- Soften the unsalted butter at room temperature.
- Preheat your oven to 325°F (160°C).
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually mix the dry ingredients into the creamed mixture, alternating with the orange juice.
- Fold in the chopped dried fruits and nuts.
- Prepare a greased 9×5-inch loaf pan lined with parchment paper.
- Pour the batter into the pan and smooth the top.
- Bake for 60-75 minutes or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Fruit cake tastes even better after a day or two! Wrap tightly for storage. For a quicker bake, try an air fryer.
