Description

Ingredients

  • 2 cups mixed dried fruits
  • 1 cup chopped nuts
  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup orange juice
  • 1/4 cup brandy or rum

Instructions

  1. Prep the dried fruits and nuts by measuring and chopping into bite-sized pieces.
  2. Soften the unsalted butter at room temperature.
  3. Preheat your oven to 325°F (160°C).
  4. Cream together the softened butter and granulated sugar until light and fluffy.
  5. Add the eggs one at a time, beating well after each addition.
  6. In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  7. Gradually mix the dry ingredients into the creamed mixture, alternating with the orange juice.
  8. Fold in the chopped dried fruits and nuts.
  9. Prepare a greased 9×5-inch loaf pan lined with parchment paper.
  10. Pour the batter into the pan and smooth the top.
  11. Bake for 60-75 minutes or until a toothpick comes out clean.
  12. Let cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Fruit cake tastes even better after a day or two! Wrap tightly for storage. For a quicker bake, try an air fryer.
