- 1 cup cottage cheese
- 1/2 cup Greek yogurt
- 1/4 cup protein powder
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon juice
- 1/4 cup crushed graham crackers (optional for crust)
Instructions
- Preheat the oven to 350°F (175°C).
- In a blender, combine cottage cheese, Greek yogurt, protein powder, honey, vanilla extract, and lemon juice. Blend until smooth.
- If using, press crushed graham crackers into the bottom of mini muffin tins to form a crust.
- Pour the cheesecake mixture into the prepared muffin tins, filling each cup about 3/4 full.
- Bake for 15-20 minutes or until the edges are set and the center is slightly jiggly.
- Remove from the oven and let cool before refrigerating for at least 2 hours.
