Ingredients

  • 4 slices of bacon, cooked and crumbled
  • 1/4 cup mayonnaise

  • 1 teaspoon white vinegar

Instructions

  1. Hard boil the eggs: Place the eggs in a pot of cold water. Bring it to a boil, cover, and remove from heat. Let sit for 12 minutes, then cool in an ice bath.
  2. Peel and halve the eggs: Once cooled, peel the eggs and cut them in half lengthwise.
  3. Prepare the yolk mixture: Mash the yolks in a mixing bowl, then add mayonnaise, Dijon mustard, white vinegar, salt, and pepper. Mix until smooth.
  4. Incorporate the bacon: Stir in crumbled bacon to the yolk mixture.
  5. Fill the egg whites: Spoon or pipe the yolk mixture back into the egg whites.
  6. Garnish and serve: Top with chives or green onion and serve cold.
