- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- Fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add diced chicken and season with garlic powder, paprika, cumin, salt, and pepper.
- Cook until the chicken is browned and cooked through, about 7-10 minutes.
- In a bowl, layer the cooked rice, followed by the cooked chicken.
- Add cherry tomatoes, cucumber, red onion, and feta cheese on top.
- Garnish with fresh parsley and serve warm.
Notes
- Feel free to add other vegetables like bell peppers or olives.
- This dish can be made ahead and stored in the refrigerator for up to 3 days.
- For a spicier kick, add red pepper flakes to the chicken while cooking.
