- 4 boneless, skinless chicken breasts
- 2 tablespoons extra virgin olive oil
- 2 teaspoons oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Pita bread (whole wheat or gluten-free)
- 1 cup plain full-fat Greek yogurt
- 1/2 cup crumbled feta cheese
- 1 cucumber, grated
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- Fresh parsley for garnish
Instructions
- Preheat your grill or skillet over medium heat.
- In a bowl, combine olive oil, oregano, garlic powder, and a generous pinch of salt and pepper. Coat the chicken breasts thoroughly with the mixture.
- Grill or cook the chicken for about 6-7 minutes on each side until cooked through and golden.
- While the chicken cooks, in another bowl, mix together Greek yogurt, crumbled feta, grated cucumber, minced garlic, and lemon juice until smooth.
- Once cooked, let the chicken rest for a couple of minutes before slicing it into strips.
- Assemble the gyros by placing sliced chicken in warm pita bread, top with feta tzatziki, and garnish with fresh parsley. Serve immediately.
Notes
For enhanced flavor, marinate the chicken overnight. The tzatziki sauce is best enjoyed fresh but can be stored in the fridge for 2-3 days.
