Delicious twice-baked sweet potatoes topped with maple syrup and pecans, perfect for a comforting side dish.
Ingredients

- 4 medium sweet potatoes
- 1/4 cup maple syrup
- 1/2 cup pecans, chopped
- 1/4 cup butter, softened
- 1/2 cup milk
- 1 teaspoon cinnamon
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork.
- Bake the sweet potatoes for 45-60 minutes until tender.
- Let them cool slightly, then cut them in half and scoop out the flesh into a bowl.
- Add maple syrup, butter, milk, cinnamon, and salt to the sweet potato flesh and mash until smooth.
- Fold in the chopped pecans.
- Stuff the sweet potato skins with the mixture and place them back in the oven.
- Bake for an additional 15-20 minutes until heated through.
Notes
- For a vegan version, substitute butter with coconut oil and milk with almond milk.
- Adjust the sweetness by adding more or less maple syrup according to your taste.
