Delicious twice-baked sweet potatoes topped with maple syrup and pecans, perfect for a comforting side dish.


Ingredients

  • 4 medium sweet potatoes
  • 1/4 cup maple syrup
  • 1/2 cup pecans, chopped
  • 1/4 cup butter, softened
  • 1/2 cup milk
  • 1 teaspoon cinnamon
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork.
  3. Bake the sweet potatoes for 45-60 minutes until tender.
  4. Let them cool slightly, then cut them in half and scoop out the flesh into a bowl.
  5. Add maple syrup, butter, milk, cinnamon, and salt to the sweet potato flesh and mash until smooth.
  6. Fold in the chopped pecans.
  7. Stuff the sweet potato skins with the mixture and place them back in the oven.
  8. Bake for an additional 15-20 minutes until heated through.

Notes

  • For a vegan version, substitute butter with coconut oil and milk with almond milk.
  • Adjust the sweetness by adding more or less maple syrup according to your taste.
