- 2 large sweet potatoes
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and peel the sweet potatoes, then cut them into wedges.
- In a large bowl, mix together olive oil, maple syrup, Dijon mustard, garlic powder, salt, and pepper.
- Add the sweet potato wedges to the bowl and toss until they are evenly coated.
- Spread the wedges in a single layer on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, flipping halfway through, until they are golden and tender.
- Remove from the oven and let cool slightly before serving.
Notes
- For extra flavor, add a sprinkle of paprika or cayenne pepper.
