Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, beat the cream cheese and granulated sugar until smooth.
- Add lemon juice, lemon zest, and vanilla extract, mixing until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
- Pour the mixture into the prepared graham cracker crust and smooth the top.
- Bake for 25-30 minutes or until set, then let it cool completely.
- In another bowl, beat the egg whites and cream of tartar until soft peaks form.
- Gradually add powdered sugar and continue beating until stiff peaks form.
- Spread the meringue over the cooled cheesecake and use a kitchen torch to lightly brown the meringue.
- Chill in the refrigerator for at least 2 hours before serving.
