A delicious and flavorful dish featuring tender lemon chicken ricotta meatballs served over garlic orzo.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/4 cup breadcrumbs
  • 2 tablespoons lemon zest
  • 2 tablespoons fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, ricotta cheese, Parmesan cheese, egg, breadcrumbs, lemon zest, parsley, garlic, salt, and pepper.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake the meatballs for 20-25 minutes or until cooked through.
  5. Meanwhile, in a saucepan, bring chicken broth to a boil and add orzo.
  6. Cook orzo according to package instructions until al dente, then drain.
  7. In a large skillet, sauté minced garlic in olive oil until fragrant, then add cooked orzo and toss to combine.
  8. Serve the meatballs over the garlic orzo and garnish with additional parsley if desired.

Notes

  • For added flavor, you can include lemon juice in the meatball mixture.
  • Feel free to substitute ground turkey for ground chicken.
