Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1/2 cup low-sodium soy sauce
  • 3 tablespoons brown sugar
  • 1 tablespoon honey
  • 2 tablespoons gochujang
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 4 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon toasted sesame seeds
  • 2 green onions, thinly sliced
  • 3 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 medium carrot, julienned
  • 2 tablespoons mayonnaise
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • Salt and black pepper to taste
  • 4 brioche or potato sandwich buns
  • Butter for toasting

Instructions

  1. Marinate the Chicken: Combine soy sauce, brown sugar, honey, gochujang, rice vinegar, sesame oil, minced garlic, and grated ginger in a bowl. Marinate the chicken for at least 30 minutes.
  2. Make the Cabbage Slaw: Mix shredded green cabbage, red cabbage, julienned carrot, mayonnaise, rice vinegar, and sugar in a bowl. Season with salt and pepper.
  3. Cook the Chicken: Preheat grill pan over medium-high heat. Cook chicken for 6-7 minutes on each side until internal temperature reaches 165°F.
  4. Toast the Buns: Spread butter on the insides of the buns and toast them in the same skillet until golden brown.
  5. Assemble the Sandwich: Layer grilled chicken on the bun, add cabbage slaw, sprinkle with sesame seeds and green onions, and top with the other bun.

Notes

Marinate chicken overnight for best flavor. Customize slaw with extra greens or toppings for more texture.
