- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup jam (your choice of flavor)
- 1/4 cup powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the melted butter, milk, eggs, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fill each muffin cup halfway with batter, then add a teaspoon of jam in the center of each muffin.
- Top with more batter until the cups are about 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool for a few minutes before dusting with powdered sugar.
Notes
- Feel free to use any flavor of jam you prefer.
- For a richer flavor, you can add a pinch of cinnamon to the batter.
- Store leftovers in an airtight container for up to 3 days.
