- 2 large yellow or sweet onions
- 8 oz cream cheese (softened)
- 1 cup shredded sharp cheddar
- 1–2 jalapeños, finely diced (seeded for mild heat)
- ½ cup all-purpose flour
- 2 eggs, beaten
- 1½ cups seasoned breadcrumbs or panko
- Optional: ¼ cup bacon bits, ½ tsp garlic powder, 2 tbsp chopped scallions
- Oil for frying (vegetable or canola)
Instructions
- Slice the onions into ½-inch thick rings and separate the layers, choosing the sturdier sections for stuffing.
- In a mixing bowl, combine softened cream cheese, shredded cheddar, finely diced jalapeños, and any optional add-ins. Mix thoroughly and chill for about 10 minutes.
- Generously fill each onion ring with the creamy mixture using a spoon or piping bag, smoothing the edges.
- Lay the stuffed rings flat on a parchment-lined tray and freeze for 20–30 minutes.
- Create a dredging station with flour, beaten eggs, and breadcrumbs. Coat each frozen ring first in flour, then dip in eggs, and roll in breadcrumbs, repeating for a double coating.
- Heat oil in a heavy-bottomed pot to 350°F (175°C). Fry rings in batches for about 2–3 minutes per side until golden brown.
- Transfer fried rings to a paper towel-lined plate to drain excess oil and serve hot with your favorite dips.
Notes
For a lighter version, try air frying at 375°F (190°C) for 12-15 minutes or baking at 425°F (220°C) for 20-25 minutes. These onion rings can be made a day in advance and frozen before frying.
