- 1 teaspoon Baking Powder
- 1 teaspoon Salt (sea salt recommended)
- 2 cups Baby Spinach (finely chopped; kale can be substituted)
- 1 cup Shredded Mozzarella Cheese (or Feta for a tangier flavor)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, whisk together the cottage cheese, olive oil, and egg until smooth. For a vegan option, mix 1 tablespoon of ground flaxseed with 2.5 tablespoons of water and let sit until thickened.
- In another bowl, combine the flour, baking powder, and salt.
- Stir the chopped spinach into the wet mixture, followed by the shredded mozzarella.
- Gradually add the dry ingredients into the wet mixture and combine gently until just held together.
- Grease your hands and shape a portion of the dough into a ball, creating a hole in the center to form a flagel.
- Place the flagels on a lined baking sheet and bake for 20-25 minutes, or until golden brown.
- Allow to cool slightly before serving warm.
Notes
