  • 2 cups Baby Spinach (finely chopped; kale can be substituted)
  • 1 cup Shredded Mozzarella Cheese (or Feta for a tangier flavor)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the cottage cheese, olive oil, and egg until smooth. For a vegan option, mix 1 tablespoon of ground flaxseed with 2.5 tablespoons of water and let sit until thickened.
  3. In another bowl, combine the flour, baking powder, and salt.
  4. Stir the chopped spinach into the wet mixture, followed by the shredded mozzarella.
  5. Gradually add the dry ingredients into the wet mixture and combine gently until just held together.
  6. Grease your hands and shape a portion of the dough into a ball, creating a hole in the center to form a flagel.
