- 4 boneless, skinless chicken breasts
- 1 cup cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1/2 cup cooked spinach, drained and chopped
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup breadcrumbs
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix cream cheese, mozzarella, spinach, Parmesan, garlic, Italian seasoning, salt, and pepper until well combined.
- Cut a pocket in each chicken breast and stuff with the cheese mixture.
- Secure the openings with toothpicks if necessary.
- Coat the stuffed chicken breasts with breadcrumbs.
- Heat olive oil in a skillet over medium heat and sear the chicken on both sides until golden brown.
- Transfer the chicken to a baking dish and bake for 25-30 minutes or until cooked through.
- Remove toothpicks before serving.
