- 4 cod fillets (approximately 5 oz each)
- 3 tablespoons unsalted butter
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- Salt and pepper, to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Prep the cod: Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
- Sear the cod: Heat olive oil in a skillet over medium-high heat. Add the cod fillets and sear for 2 to 3 minutes per side until golden brown. Remove and set aside.
- Make the garlic butter: In the same skillet, melt the butter, then add minced garlic and cook for about 30 seconds until fragrant.
- Add lemon: Stir in fresh lemon juice and lemon zest, simmer for 1 minute.
- Bring it all together: Return the cod to the pan, spoon the garlic butter over each fillet for an additional 2–3 minutes until cooked through.
- Serve and garnish: Garnish with chopped parsley and serve immediately.
Notes
You can prepare the garlic butter sauce in advance and store it in the fridge. Can be made in an air fryer or baked in the oven.
