- 2 cups Granulated Sugar
- 3/4 cup Unsweetened Cocoa Powder
- 1 tablespoon Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 1 cup Buttermilk
- 1/2 cup Vegetable Oil
- 2 large Eggs
- 2 teaspoons Vanilla Extract
- 1 cup Boiling Water
- 2 cups Fresh Strawberries
- 1 tablespoon Lemon Juice
- 8 ounces Dark Chocolate
- 2 tablespoons Coconut Oil
Instructions
- Preheat your oven to 350°F (175°C).
- Mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
- Combine the buttermilk, oil, eggs, and vanilla in another bowl and whisk until smooth.
- Add the wet mixture to the dry ingredients, mixing with an electric mixer until combined.
- Incorporate the boiling water carefully to thin the batter.
- Prepare the cake pans by dividing the batter evenly and tapping to remove air bubbles.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Cool for 10 minutes, then transfer to a cooling rack to cool completely.
- Prepare the strawberries by slicing and tossing them with lemon juice.
- Melt the dark chocolate with coconut oil in a double boiler until smooth.
- Assemble the cake by layering one cooled cake, topping with strawberries and chocolate shell, and placing the second layer on top.
- Finish with remaining chocolate shell, then refrigerate for 30 minutes to set before serving.
