Description

Ingredients

  • 3/4 cup Unsweetened Cocoa Powder
  • 1 tablespoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 cup Buttermilk
  • 1/2 cup Vegetable Oil
  • 2 large Eggs
  • 2 teaspoons Vanilla Extract
  • 1 cup Boiling Water
  • 2 cups Fresh Strawberries
  • 1 tablespoon Lemon Juice
  • 8 ounces Dark Chocolate
  • 2 tablespoons Coconut Oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. Combine the buttermilk, oil, eggs, and vanilla in another bowl and whisk until smooth.
  4. Add the wet mixture to the dry ingredients, mixing with an electric mixer until combined.
  5. Incorporate the boiling water carefully to thin the batter.
  6. Prepare the cake pans by dividing the batter evenly and tapping to remove air bubbles.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Cool for 10 minutes, then transfer to a cooling rack to cool completely.
  9. Prepare the strawberries by slicing and tossing them with lemon juice.
  10. Melt the dark chocolate with coconut oil in a double boiler until smooth.
  11. Assemble the cake by layering one cooled cake, topping with strawberries and chocolate shell, and placing the second layer on top.
  12. Finish with remaining chocolate shell, then refrigerate for 30 minutes to set before serving.
