Description

A vibrant Cajun-inspired pasta dish with succulent shrimp, chicken, and andouille sausage enveloped in a creamy sauce.

Ingredients

Scale
  • 8 oz Penne Pasta
  • 1 lb Boneless Skinless Chicken Breast
  • 1 lb Shrimp
  • 8 oz Andouille Sausage
  • 1 cup Bell Peppers (mixed colors)
  • 1 medium Red Onion
  • 4 cloves Garlic (minced)
  • 1 cup Heavy Cream
  • 1 cup Parmesan Cheese
  • 2 tbsp Cajun Seasoning
  • 2 tbsp Olive Oil
  • Salt, to taste
  • Pepper, to taste
  • 1/4 cup Chopped Parsley (for garnish)

Instructions

  1. Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, then drain.
  2. Prepare the Protein: In a large skillet, heat olive oil over medium heat. Add the diced chicken breast, season lightly with salt and pepper, and cook until browned, about 5-7 minutes. Remove and set aside.
  3. Sauté the Sausage and Shrimp: In the same skillet, add the sliced andouille sausage and sauté until browned, about 3-4 minutes. Add the shrimp and cook for an additional 2 minutes until they turn pink and opaque.
  4. Add Aromatics: Add minced garlic, diced red onion, and chopped bell peppers to the skillet. Sauté for 3-4 minutes until softened.
  5. Create the Creamy Sauce: Pour in the heavy cream, stir to combine, and let the mixture simmer gently. Add the Cajun seasoning.
  6. Combine Everything: Return the cooked chicken to the skillet, along with the drained pasta. Add the Parmesan cheese and mix until well-coated.
  7. Garnish and Serve: Sprinkle with fresh parsley before serving.
