- 8 oz Penne Pasta
- 1 lb Boneless Skinless Chicken Breast
- 1 lb Shrimp
- 8 oz Andouille Sausage
- 1 cup Bell Peppers (mixed colors)
- 1 medium Red Onion
- 4 cloves Garlic (minced)
- 1 cup Heavy Cream
- 1 cup Parmesan Cheese
- 2 tbsp Cajun Seasoning
- 2 tbsp Olive Oil
- Salt, to taste
- Pepper, to taste
- 1/4 cup Chopped Parsley (for garnish)
Instructions
- Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, then drain.
- Prepare the Protein: In a large skillet, heat olive oil over medium heat. Add the diced chicken breast, season lightly with salt and pepper, and cook until browned, about 5-7 minutes. Remove and set aside.
- Sauté the Sausage and Shrimp: In the same skillet, add the sliced andouille sausage and sauté until browned, about 3-4 minutes. Add the shrimp and cook for an additional 2 minutes until they turn pink and opaque.
- Add Aromatics: Add minced garlic, diced red onion, and chopped bell peppers to the skillet. Sauté for 3-4 minutes until softened.
- Create the Creamy Sauce: Pour in the heavy cream, stir to combine, and let the mixture simmer gently. Add the Cajun seasoning.
- Combine Everything: Return the cooked chicken to the skillet, along with the drained pasta. Add the Parmesan cheese and mix until well-coated.
- Garnish and Serve: Sprinkle with fresh parsley before serving.

Making this dish ahead of time can save stress. Store leftovers in an airtight container for up to 3 days. Reheat gently with a splash of cream or pasta water.
