- 2 boneless, skinless chicken breasts
- 1/4 cup honey
- Juice of 2 limes and Zest of 1 lime
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1 cup jasmine rice
- 2 cups chicken broth
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon olive oil
- Lime wedges, for serving
Instructions
- Create the Marinade: In a mixing bowl, combine honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper. Whisk until well combined.
- Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, seal or cover, and refrigerate for at least 30 minutes, up to 2 hours.
- Prepare the Rice: Rinse the jasmine rice under cold running water. In a saucepan, bring the chicken broth to a boil, add rice, cover, and simmer for about 15 minutes.
- Heat the Grill: Preheat your grill over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes per side or until fully cooked.
- Rest and Slice: Once cooked, rest the chicken for a few minutes before slicing it into thin strips.
- Mix the Avocado Topping: In a bowl, combine diced avocado, red onion, cilantro, and olive oil. Stir gently to combine.
- Assemble the Stack: Layer a serving of jasmine rice, then add sliced chicken and the avocado mixture. Garnish with lime wedges before serving.
Notes
Marinating the chicken longer enhances the flavor. Rinse the rice for a fluffier texture.
