  • Salt and pepper to taste

Instructions

  1. In a saucepan, bring vegetable broth to a boil.
  2. Add pearl couscous and cook for about 10 minutes until tender.
  3. In a separate pan, sauté butternut squash in olive oil until soft.
  4. In a large bowl, combine cooked couscous, sautéed squash, diced apples, cranberries, and walnuts.
