Ingredients

- 1 cup pearl couscous
- 2 cups vegetable broth
- 1/4 cup honey
- 1/2 cup diced butternut squash
- 1/2 cup diced apples
- 1/4 cup dried cranberries
- 1/4 cup chopped walnuts
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a saucepan, bring vegetable broth to a boil.
- Add pearl couscous and cook for about 10 minutes until tender.
- In a separate pan, sauté butternut squash in olive oil until soft.
- In a large bowl, combine cooked couscous, sautéed squash, diced apples, cranberries, and walnuts.
- Drizzle honey over the salad and mix well.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
- Feel free to add other seasonal vegetables.
