- 4 chicken thighs, bone-in, skin-on
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 2 tablespoons ginger, grated
- 2 tablespoons brown sugar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- Green onions, for garnish
Instructions
- In a large mixing bowl, combine pineapple juice, soy sauce, grated ginger, brown sugar, sesame oil, and minced garlic. Whisk until well blended.
- Add chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
- Preheat grill to medium-high heat.
- Remove chicken from marinade, letting excess liquid drip off, and place on the grill.
- Grill chicken for about 6-7 minutes on each side until it reaches an internal temperature of 165°F and has nice grill marks.
- Let the chicken rest for a few minutes before serving. Garnish with chopped green onions.
Notes
For best flavor, marinate overnight. Can be cooked on a grill, in an air fryer, or oven.
