Description

A tropical dish featuring grilled chicken, caramelized pineapple, and creamy coconut rice that brings a taste of Hawaii to your table.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 fresh pineapple, sliced
  • 1 cup jasmine rice
  • 1 can coconut milk
  • Salt and pepper to taste
  • Olive oil
  • Optional: Green onions or cilantro for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice with coconut milk and a pinch of salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes until tender.
  2. While the rice is simmering, season the chicken breasts with salt and pepper. Heat olive oil in a grill pan or skillet over medium-high heat.
  3. Grill the chicken for about 5-7 minutes on each side until golden and cooked through. Let it rest for a few minutes.
  4. Add the pineapple slices to the same pan and grill for about 2-3 minutes on each side until caramelized.
  5. Serve on a plate with a bed of coconut rice, sliced chicken, topped with grilled pineapple and garnish with green onions or cilantro.

Notes

You can prepare the coconut rice in advance. Use an air fryer for the chicken for a healthier alternative.
