Instructions
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a large bowl, combine olive oil, minced garlic, oregano, lemon juice, salt, and pepper.
- Add the potatoes to the bowl and toss until they are well coated.
- Spread the potatoes in a single layer on a baking sheet.
- Bake for 30-35 minutes, or until the potatoes are golden and tender, stirring halfway through.
- Garnish with fresh parsley before serving.
