Ingredients

- 1 large cucumber
- 4 oz cream cheese
- 1/2 cup Greek yogurt
- 1/4 cup fresh dill, chopped
- 1/4 cup olives, chopped
- 1 tsp lemon juice
- Salt and pepper to taste
- 8 slices of whole grain bread
Instructions
- Slice the cucumber into thin rounds.
- In a bowl, mix cream cheese, Greek yogurt, dill, olives, lemon juice, salt, and pepper until well combined.
- Spread the mixture evenly on one side of each slice of bread.
- Layer cucumber slices on top of the spread on half of the bread slices.
- Top with the remaining bread slices, spread side down.
- Cut sandwiches into halves or quarters and serve immediately.
