- 2 boneless, skinless chicken breasts
- 1 cup Greek yogurt
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
Instructions
- In a bowl, mix Greek yogurt, olive oil, lemon juice, garlic, oregano, salt, and pepper to create the marinade.
- Add chicken breasts to the marinade and let them sit for at least 30 minutes.
- Preheat the grill or skillet over medium heat.
- Cook the marinated chicken for 6-7 minutes on each side or until fully cooked.
- Remove chicken from heat and let it rest for a few minutes before slicing.
- In a large bowl, combine cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
- Top the vegetable mixture with sliced chicken and drizzle with additional olive oil and lemon juice if desired.
