Description

Gordon Ramsay’s Sticky Toffee Pudding is a rich and indulgent dessert featuring a moist sponge cake made with finely chopped dates, drenched in a luscious toffee sauce.


Ingredients

  • 200g pitted dates, chopped
  • 250ml boiling water
  • 1 tsp baking soda
  • 100g unsalted butter, softened
  • 150g brown sugar
  • 2 large eggs
  • 200g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • For the toffee sauce: 200g brown sugar, 100g unsalted butter, 250ml double cream

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a baking dish.
  2. In a bowl, combine the chopped dates and boiling water, then stir in the baking soda and let it sit.
  3. In another bowl, cream together the butter and brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the flour and baking powder, followed by the date mixture and vanilla extract.
  6. Pour the batter into the prepared baking dish and bake for 30-35 minutes or until a skewer comes out clean.
  7. For the toffee sauce, melt the butter and brown sugar in a saucepan, then stir in the double cream and simmer until thickened.
  8. Once the pudding is baked, pour some toffee sauce over it and serve warm with extra sauce on the side.

  • Serve with vanilla ice cream or whipped cream for added indulgence.
