- 1 can (20 oz) sliced pineapple in juice
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup buttermilk
Instructions
- Preheat the oven to 350°F (175°C).
- Drain the pineapple slices and reserve the juice.
- In a saucepan, melt the butter and brown sugar over medium heat until bubbly.
- Pour the butter mixture into the bottom of a bundt pan.
- Arrange the pineapple slices on top of the butter mixture.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, beat the granulated sugar and eggs until light and fluffy.
- Add the vanilla extract and buttermilk to the egg mixture, mixing well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter over the pineapple in the bundt pan.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Let the cake cool for 10 minutes before inverting onto a serving plate.
Notes
- For a richer flavor, use dark brown sugar.
- Serve with whipped cream or vanilla ice cream for added indulgence.
- Store leftovers in an airtight container at room temperature for up to 3 days.
