Ingredients

  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda

  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Drain the pineapple slices and reserve the juice.
  3. In a saucepan, melt the butter and brown sugar over medium heat until bubbly.
  4. Pour the butter mixture into the bottom of a bundt pan.
  5. Arrange the pineapple slices on top of the butter mixture.
  6. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  7. In another bowl, beat the granulated sugar and eggs until light and fluffy.
  8. Add the vanilla extract and buttermilk to the egg mixture, mixing well.
  9. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  10. Pour the batter over the pineapple in the bundt pan.
  11. Bake for 45-50 minutes or until a toothpick comes out clean.
  12. Let the cake cool for 10 minutes before inverting onto a serving plate.
