- 2 lbs beef, cut into cubes
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 2 cups beef broth
- 1 cup orzo pasta
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- Fresh parsley, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, sauté until translucent.
- Add the beef cubes and brown on all sides.
- Stir in the diced tomatoes, beef broth, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 hours until the beef is tender.
- Add the orzo pasta and cook for an additional 10-12 minutes until the pasta is al dente.
- Serve hot, garnished with fresh parsley.
Notes
- For a richer flavor, you can add a splash of red wine.
- Feel free to add vegetables like carrots or bell peppers for extra nutrition.
