- Salt and pepper to taste

Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the halved baby potatoes, olive oil, minced garlic, oregano, salt, and pepper. Toss until the potatoes are well coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until golden brown and tender.
- Remove from the oven and sprinkle with grated Parmesan cheese.
- Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
