Ingredients

Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, minced garlic, thyme, rosemary, salt, and pepper.
- Coat the chicken breasts with the garlic herb mixture.
- Place the chicken on a baking sheet.
- In the same bowl, toss the sliced carrots with a little olive oil, salt, and honey if using.
- Arrange the carrots around the chicken on the baking sheet.
- Bake for 25-30 minutes or until the chicken is cooked through and the carrots are tender.
- Let it rest for a few minutes before serving.
