- 8 oz (225 g) unsalted butter, softened
- 8 oz (225 g) light brown sugar
- 4 large eggs
- 8 oz (225 g) all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 8 oz (225 g) mixed dried fruit
- 4 oz (115 g) marzipan
- 2 oz (55 g) apricot jam
- 11 marzipan balls for decoration
Instructions
- Preheat the oven to 325°F (160°C).
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Sift together the flour, baking powder, and spices, then fold into the mixture.
- Stir in the mixed dried fruit.
- Pour half of the batter into a greased cake tin.
- Roll out half of the marzipan and place it on top of the batter in the tin.
- Pour the remaining batter over the marzipan layer.
- Bake in the preheated oven for about 1.5 hours or until a skewer comes out clean.
- Once cooled, brush the top with apricot jam and roll out the remaining marzipan to cover the cake.
- Decorate with the eleven marzipan balls.

- Ensure the cake is completely cool before covering with marzipan.
- Store in an airtight container to keep it fresh.
- This cake can be made a few days in advance to enhance the flavors.
