Description

Easter Simnel Cake is a traditional British fruitcake that is typically enjoyed during the Easter season, featuring layers of marzipan and decorated with eleven marzipan balls representing the apostles.

  • 8 oz (225 g) unsalted butter, softened
  • 8 oz (225 g) light brown sugar
  • 4 large eggs
  • 8 oz (225 g) all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 8 oz (225 g) mixed dried fruit
  • 4 oz (115 g) marzipan
  • 2 oz (55 g) apricot jam
  • 11 marzipan balls for decoration

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Sift together the flour, baking powder, and spices, then fold into the mixture.
  5. Stir in the mixed dried fruit.
  6. Pour half of the batter into a greased cake tin.
  7. Roll out half of the marzipan and place it on top of the batter in the tin.
  8. Pour the remaining batter over the marzipan layer.
  9. Bake in the preheated oven for about 1.5 hours or until a skewer comes out clean.
  10. Once cooled, brush the top with apricot jam and roll out the remaining marzipan to cover the cake.
  11. Decorate with the eleven marzipan balls.
