Ingredients

  • 1 cup canned chickpeas, drained and rinsed
  • 1 medium sweet potato, peeled and grated
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onions
  • 1 clove garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a large bowl, mash the chickpeas with a fork until mostly smooth.
  2. Add the grated sweet potato, breadcrumbs, parsley, green onions, garlic, cumin, paprika, salt, and pepper. Mix until well combined.
  3. Form the mixture into small patties.
