Ingredients

- 1 large cucumber
- 1 cup hummus
- 1 whole wheat wrap or tortilla
- 1/2 cup shredded carrots
- 1/4 cup bell peppers, sliced
- 1/4 cup spinach leaves
- Salt and pepper to taste
Instructions
- Wash the cucumber and slice it lengthwise into thin strips.
- Spread a generous layer of hummus over the whole wheat wrap.
- Add the shredded carrots, sliced bell peppers, and spinach leaves on top of the hummus.
- Place the cucumber strips on top of the vegetables.
- Season with salt and pepper to taste.
- Roll the wrap tightly and slice it in half.
- Serve immediately or wrap in foil for a portable snack.
Notes
- Feel free to add other vegetables like avocado or sprouts for extra flavor.
- This wrap can be made ahead of time and stored in the refrigerator for up to 2 days.
