  • 2 cups beef broth

  • 1 teaspoon dried thyme
  • Salt and pepper to taste

  • Provolone cheese (optional)

Instructions

  1. Start by placing the beef chuck roast in your crockpot. Generously season both sides with salt and pepper.
  2. Layer the sliced onions evenly over the beef, followed by the minced garlic.
  3. Pour the beef broth and Worcestershire sauce over the meat, ensuring it’s well-covered. Sprinkle dried rosemary and thyme for added flavor.
  4. Cover the crockpot and set it to low for 480 minutes or high for 240 minutes.
  5. When the cooking time is up, carefully remove the roast and shred the meat using two forks.
  6. Return the shredded beef to the crockpot for about 10 minutes.
  7. To serve, pile the dripping shredded beef onto sub rolls, adding provolone cheese if desired.
  8. Ladle the remaining broth into small bowls for dipping.

Notes

For a crispy edge, briefly toast the sub rolls on a skillet after filling them.
