- 4 small to medium chicken breasts (or 2 large halved)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3–4 cloves garlic, minced
- 1 cup light cream or heavy cream
- 1 tablespoon Italian seasoning or oregano
- 1/2 cup parmesan cheese, grated
- 1 cup spinach, chopped (optional)
Instructions
- Season the chicken breasts generously with salt and pepper on both sides.
- Heat the olive oil in a non-stick skillet over medium-high heat.
- Carefully place the chicken in the skillet, cooking for 5-6 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside.
- Add the minced garlic to the pan and sauté for about 30 seconds.
- Pour in the cream slowly, stirring until smooth.
- Sprinkle in the Italian seasoning and parmesan cheese, mixing until melted.
- If using spinach, fold it in now and allow it to wilt for 2-3 minutes.
- Return the cooked chicken to the skillet, spooning the sauce over the top.
- Simmer for a minute to meld the flavors.
- Serve hot with pasta or vegetables.
Notes
Let chicken rest after cooking for juicier meat. Feel free to customize with different herbs or vegetables.
