- 1 pound salmon fillet, cut into bite-sized cubes
- 1/2 cup panko breadcrumbs
- 1/4 cup flour
- 2 eggs, beaten
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (optional)
- Chopped green onions for garnish
Instructions
- Preheat your pan over medium-high heat, adding vegetable oil until hot.
- Prepare your dredging stations: season flour with salt and pepper, whisk eggs in a separate bowl, and place panko breadcrumbs in another.
- Coat each salmon cube first in the seasoned flour, then in the eggs, and finally in the panko breadcrumbs.
- Carefully place the salmon bites in the hot oil and sear until golden brown and cooked through, about 2-3 minutes per side.
- In a separate bowl, whisk together mayonnaise, sweet chili sauce, and sriracha for the Bang Bang sauce.
- Drizzle the crispy salmon bites with the Bang Bang sauce and garnish with chopped green onions before serving.
Notes
These bites can be prepared up to the frying point and refrigerated; fry just before serving for perfect crunch.
