Ingredients

  • 34 lbs beef chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup Arborio rice
  • 4 cups chicken broth
  • 1 cup grated Parmesan cheese
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Sear the beef roast on all sides until browned.
  3. Add chopped onion, carrots, celery, and garlic to the pot. Sauté until vegetables are softened.
  4. Pour in red wine and scrape the bottom of the pot to deglaze. Add beef broth, tomato paste, thyme, rosemary, salt, and pepper.
  5. Cover and transfer to the oven. Cook for 3-4 hours until the meat is tender.
  6. For the risotto, in a separate pot, heat chicken broth and keep warm.
  7. In a large skillet, melt butter and add Arborio rice. Stir for 2 minutes until the rice is lightly toasted.
  8. Add warm chicken broth one ladle at a time, stirring continuously until absorbed before adding more.
  9. Once the rice is creamy and al dente, stir in grated Parmesan cheese and season with salt and pepper.
  10. Serve the pot roast with the risotto on the side, garnished with fresh herbs if desired.

  • For a richer flavor, let the pot roast marinate overnight in the fridge.
  • Feel free to add other vegetables like potatoes or mushrooms to the pot roast.
