- 8 oz linguine pasta
- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large pot, boil salted water and add the linguine. Cook according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add shrimp and cook for about 3-4 minutes until the shrimp turn pink and opaque. Remove and set aside.
- In the same skillet, add minced garlic and sauté until fragrant (about 1 minute). Then add cherry tomatoes and spinach, cooking until the spinach wilts and the tomatoes begin to soften.
- Pour in the heavy cream and stir, allowing it to come to a gentle simmer. Gradually add the grated Parmesan cheese, stirring until melted and the sauce is creamy. Season with salt and pepper to taste.
- Return the shrimp to the skillet, then add the linguine. Toss everything together gently, ensuring the pasta is well-coated in the creamy sauce. Heat until warmed through.
- Plate your delicious creation, garnishing with fresh basil. Serve immediately.
