- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup heavy cream
- 1 package (16 ounces) gnocchi
- Fresh basil for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
- Add minced garlic and cook for another minute until fragrant.
- Stir in crushed tomatoes, vegetable broth, dried basil, oregano, salt, and pepper. Bring to a simmer.
- Reduce heat and stir in heavy cream, mixing well.
- Add gnocchi to the pot and cook according to package instructions until they float to the top.
- Serve hot, garnished with fresh basil.

- For a lighter version, substitute heavy cream with coconut milk.
