  • 9 lasagna noodles
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 2 cups marinara sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  4. Add mushrooms and cook until tender, then add spinach and cook until wilted.
  5. In a bowl, mix ricotta cheese with salt and pepper.
  6. Spread a layer of marinara sauce on the bottom of a baking dish.
  7. Layer 3 lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the spinach and mushroom mixture, and a layer of mozzarella cheese.
  8. Repeat the layers, finishing with a layer of noodles topped with marinara sauce and remaining mozzarella and Parmesan cheese.
  9. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  10. Let it cool for a few minutes before slicing and serving.
