Description

Ingredients

  • 2 chicken breasts
  • 1/3 cup all-purpose flour
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 8 sun-dried tomatoes, sliced
  • 1/2 tbsp smoked paprika
  • 1/2 tbsp dried oregano
  • 1/2 tbsp red chili flakes
  • 2 1/2 cups chicken stock
  • 1 1/4 cups single cream
  • 2 tbsp grated parmesan cheese (plus more for serving)
  • 1/2 tsp ground black pepper
  • 1/2 tsp flaky salt
  • 1/2 tsp sugar
  • 7 oz ramen noodles
  • Fresh cilantro, bean sprouts, edamame beans, scallions, chili oil (for garnish)

Instructions

  1. Season chicken breasts with salt and pepper and coat with flour, shaking off excess.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5-7 minutes per side until golden brown. Remove and set aside.
  3. Add minced garlic to the skillet and sauté for 1 minute. Stir in sun-dried tomatoes, smoked paprika, oregano, and red chili flakes.
  4. Pour in chicken stock and bring to a simmer, scraping the pan to release flavorful bits.
  5. Lower the heat and stir in cream and grated parmesan, cooking until sauce thickens (5-8 minutes).
  6. Cook ramen noodles according to package instructions, drain, and rinse.
  7. Return chicken to the skillet and let soak in the sauce for 3-4 minutes.
  8. Toss in the ramen noodles until fully coated. Adjust seasoning with salt and sugar.
  9. Serve topped with cilantro, bean sprouts, scallions, and a drizzle of chili oil.

Notes

Make the sauce in advance and cook the ramen when ready to serve. For a healthier option, chicken can be cooked in an air fryer.
