- 4 cups low-sodium chicken broth
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 cups ramen noodles
- 1 cup fresh vegetables (spinach, carrots, bell peppers)
- 1/2 cup heavy cream
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until golden and fragrant.
- Add the chicken breasts to the pot and season with salt and pepper. Cook until the chicken is no longer pink, about 6-7 minutes per side. Remove and slice thinly.
- In the same pot, pour in the chicken broth and bring it to a gentle boil.
- Toss in the ramen noodles and cook according to package instructions, about 2-3 minutes.
- Add the fresh vegetables and cook for an additional 2-3 minutes until tender yet vibrant.
- Reduce heat and stir in the heavy cream until mixed well with the broth.
- Add the sliced chicken back into the pot and warm through.
- Serve hot, garnished with green onions.
