- 1 pound shrimp, peeled and deveined
- 2 cups cucumbers, diced
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped
- Salt and pepper to taste
Instructions
- In a large pot, bring water to a boil and cook the shrimp until pink, about 2-3 minutes. Drain and let cool.
- In a mixing bowl, combine mayonnaise, sour cream, lemon juice, dill, salt, and pepper.
- Add the cooled shrimp and diced cucumbers to the dressing and mix well.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve cold, garnished with additional dill if desired.
Notes
- For a lighter version, use Greek yogurt instead of mayonnaise and sour cream.
- This salad can be made a day in advance for better flavor.
