Instructions
- In a food processor, combine the pitted dates, pistachios, dried cranberries, rolled oats, chia seeds, honey or maple syrup, and vanilla extract.
- Process until the mixture is well combined and sticky.
- Using your hands, form the mixture into small balls, about 1 inch in diameter.
- Place the energy bites on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the refrigerator for up to one week.
